Run?!!?? Say WHAT???

Run?!!??  Say WHAT???

I was NEVER a runner and would do anything to get out of running!  Running hurt my teeth, it hurt my lungs and quite frankly, I just hated, hated, hated running!  (My dad would always say, “Hate is an awful strong word!” and my younger brother, at a sweet innocent age, said in reply to my dad one day, “Well, I meant it in an awful strong way!”  That’s how I felt about running!  Hahaha.)

So fast forward, well, my whole life, till just 4 years ago (2011).  My daughter wanted to participate in a school running club.  I was in full support of her getting active.  I signed her permission form and she was on her way!

DSCF0370Now, at that time, I was about 190 pounds.  I had lots of reasons why the weight kept coming on.  I was a busy mom of 4 little people.  I worked many hours.  I worked as an interpreter (it’s a ‘grab food and run’ kind of job).  I had my own self doubt and lack of motivation.  I was motivated to do many things but quite often taking care of myself seemed to slide right off my list.   Shopping, especially clothes shopping, was NOT a hobby of mine.  Most of the time, I cried when it came to shopping.

One day after practice, my daughter came home and said she wanted me to run with her in their upcoming 5k.  I was a little scared about that idea, as I knew I really disliked running, and I also knew how much weight I had on me.  But I also wanted to support her.  So I accepted her invite.

At that time, I didn’t have any running shoes at all!  We were very, very poor and I was hesitant to buy some, in fear I would break the bank.  Some how, Ryan and I managed to spare $20 for some shoes.  That was a sacred moment for me at the shoe store.  I took the purchasing of these shoes very seriously, IMG_20111210_090428_2although I knew my shoes wouldn’t be the top-of-the-line, I still wanted the best I could find for the money I had.  I felt very blessed that day as the shoes I liked the most were on sale and I walked out, more committed to train for this 5k.

I began training that night.  I found a ‘Couch to 5k’ (C25K) app that would help me along the way.  I remember the first day – I thought I was going to DIE!!!  I wasn’t sure how I would be able to keep doing it.  But I had to keep going because I really didn’t want to waste our family’s $20.

The next “WHAT IN THE WORLD DID I GET MYSELF INTO” moment was when I hit the mile mark (over a month into running).  First, it was amazing that I, Susan Layton, ran a WHOLE mile!!!  But then I thought, HOW in the world will I be able to do THREE of those???  That was a hill I had to get over.  But I did!IMG_20111210_090720

At the same time, our family changed what we were eating.  We realized that what we had on our plates was food that was not entirely healthy.  We started learning about what was good for us and what wasn’t.  It was a wonderful learning curve!  I loved it! I loved it all!  I felt motivated!  My pants started getting a little looser.  I had more energy.  It was a great feeling.

The race day came.  It was cloudy and cold.  But I was PUMPED!  We ran the entire way!  We definitely were not the fastest but we didn’t stop.  It was an AWESOME feeling!  Finishing that race made me feel like a winner!  I was a winner!  I put my mind to something and I accomplished it.  Numbers didn’t matter.  It was truly the best feeling in the world!

4- Trying on clothes*

Throughout this time, I lost over 50 pounds.  My clothes were falling off me.  It was a great feeling.  The first time I went to go get a new outfit, I couldn’t believe shopping could be that exhilarating!  It was a JOY that I had not ever felt!  I was by no means SKINNY, nor did I want that.  What I started to realize throughout this time was the beauty of being healthy.  HEALTHY is what felt good!  Sure, I still had “leftovers” (tummy from stretching) from four births.  But that didn’t matter to me anymore.  I was on my way to being healthy and healthy was happy!

*Pictures: 1- Me in the green blouse.  One of the very few pictures I have of myself.  My weight was up and down but mostly up.  This was taken about 2008; 2- My first pair of running shoes.  I still am so grateful we sacrificed that $20 to buy those life-changing shoes;  3- My daughter and I at the end of the 5k!  That was a proud moment for me as a mom and well, for me!; 4- In the dressing room trying on clothes.  I shot this and sent it to my hubby – “Can you believe I’m wearing this? I love shopping!!!”  He replied something like, “Is this my wife speaking?” (Haha…) and then, “You worked for it! You deserve it! Enjoy your time! You look fabulous!”  I felt fabulous!  Working for it gave me such a huge satisfaction, because I did this!  And I wanted to keep going!

Mmmm Muesli!

One of my most favorite breakfast cereals is muesli! It’s easy to make, plus it’s delicious and nutritious!  This breakfast cereal is made the night before and ready to go in the morning!  Muesli is well known for its diversity in how you make it.  That means that you can mix it up and enjoy it different every time you make it!  You can enjoy it cold or warm!  You really can’t go wrong with muesli!

Here is my favorite way to make it: (Makes 4 servings)

2 cups rolled oatsIMG_7535

2 1/2 cups almond-coconut milk

1/2 cup flaked almonds

1/4 black chia seeds

1/4 cup shredded unsweetened coconut

*Mix this up, cover and refrigerate.  It will be ready to eat in the morning.

In the morning, I add diced up strawberries, and maybe a touch more almond-coconut milk.  Stir and enjoy!  … Mmmmm Muesli!

Other topping suggestions:

Blueberries/Raspberries

Peaches, sliced

Bananas, sliced

Green apple, grated or diced in small pieces

Dried fruit: Apricots, prunes, figs, dates, raisins,

Greek yogurt

Walnuts, chopped

Brazil nuts, chopped

Sunflower seeds

Cinnamon

More variations:

Try using quinoa as your base grain.

Instead of almond-coconut milk, use almond milk, coconut water, rice milk or low-fat milk.

Best if use fresh, thawed frozen fruit or dried fruit.  🙂

Some people even make it and eat it, without much soak time.   See, it’s hard to go wrong with this delicious dish! … ENJOY!

Lavender Lemonade

TAX DAY! … But regardless, of when you are reading this blog, have a quiet, honest moment with yourself … Are you feeling stressed? Overwhelmed? Need a little something to relax you and refresh you?  Why not try something quite delightful to help eliminate the stresses of life:

Lavender Lemonade!

Lavender is well known for it’s aroma and essential oil properties of helping to sooth, refresh, relax, and aid in winding down.  So mix the miracles of lavender into some refreshing lemonade and you’ve got a win-win refreshing drink!  Tax day?  You’ve got this!  Bogged down?  Ahh, just take a moment to collect yourself, sip some of this refreshing Lavender Lemonade and then go back to life, taking it one sip, I mean, step at a time!  Mmmm.

Recipe 1:

1 1/2 cups sugar

1 cup boiling water

6 cups cold water

1 1/2 cups lemon juice (approx. 6-8 medium-sized lemons)

1 drop Lavender Essential Oil

*Boil water.  Take off heat.  Combine sugar and boiling water until sugar dissolves completely. Next, combine the simple syrup and all other ingredients …. Smile your stresses away!

Recipe 2:

7 cups pure water

2 cups lemon juiced (approx. 8-10 medium-sized lemons)

1 drop lavender essential oil

*Mix all ingredients together …. Remarkably Refreshing!

A Special Day in 2000!

April 14, 2000. The day I wed my 10259767_10203718534903686_4519034621021399761_nlove, Ryan Layton.  I am so grateful for the blessing of being married for time and all eternity to the man I have grown to really love, appreciate and admire.  We were married and sealed in the Las Vegas LDS Temple on April 14, 2000.

Oh, this date has a story.  Since I was a very young girl, I wanted to be married on April 15th.  Sure, that sounded like a beautiful spring day.  A day with beautiful flowers10154024_10203718778389773_2019260875160657156_n blooming all over and pretty white fluffy clouds in the blue sky.  That was the day for me! … And then I grew up and realized that April 15th wasn’t the funnest of days, for this was the day your taxes would be due and blah for that.  Ha.  But I still wanted April and I realized a prettier looking day would be April 14th.  Just the numbers rang beautiful to me!  The year 2000 was the year I really wanted to be married!  I wanted a number that was easy to remember how many years I was married, every year.  I didn’t want to have to subtract, add, borrow, discuss, figure out, look at journals or anything else 1957644_10203718399380298_4581695779963541763_oto figure out how many years it had been.  So the day I wanted to marry was April 14, 2000!  😀

In 1999, my good friends from Phoenix (where I had served part of my mission) were going to attend a Deaf Expo in San Diego.  I wanted to go and be with them.  I packed up and headed to beautiful San Diego for a sure-to-be fun time.  That is where I met Ryan.  He was hanging out with all of my Phoenix friends (he knew them from his time living in the area a few months past).  It was a wonderful weekend.  But, it ended all too soon.  We exchanged email addresses and pretty much said, “have a good life” as he lived in California and 906122_10203718767709506_6641045466722837953_oI lived in Vegas.  Several months later, I received an email from him.  His company had decided to relocate to LV and that very weekend he would be in town to check out apartments.  Drats!  That weekend was New Years Eve and I already had plans to go to an old high school friend’s home for a little party.  All of my friends would be there. So Ryan and I agreed to visit the next day, if we could work out our schedules.

New Years Eve:  I arrived to my friends party.  I was greeted with hugs from many of my old alumni friends, catching up as we worked our way to the kitchen.  I stepped into the kitchen, and there was 1540286_10203718761149342_4771756794473657824_oRyan!  WHAT???  Why, how, HUH?? He was there in MY friend’s kitchen!  As we exchanged the “Huh? How do you know Lauren?”‘s, we soon learned that Lauren was my friend AND Ryan’s cousin!!!  What a small world!  Needless to say, Ryan and I hung out all weekend!  Looking back, I remember Lauren, in high school, telling me about her Deaf cousin who was at Gallaudet University.  How cool I thought that was, but I was a sophomore in high school! … And that meant he was old!  Ha.

January 2000: Ryan moved to Las Vegas.  We seemed to hit it off well.  Almost every night, after work ended, we were together.  I enjoyed his company very much.  Growing up learning ASL and being exposed at a young age to the Deaf community and culture, there was never a real struggle of Deaf/hearing between the two of us.  It was just a natural part of life.  I supported him, he supported me, and both our families supported us. That was, for sure, a blessing.

10259271_10203718748989038_1684461828553476432_oFebruary 14, 2000: Valentines Day, lunchtime.  I stood on the exit corner of the parking lot where Ryan worked.  I was with a very loving and trusting friend, Angela Darling, who kept rooting me on (from her car), to be brave!  Dressed up as a homeless girl, I held a sign.  My sign read, “Will work for love” … or something like that! It was corny and I loved being corny, especially for something that was worthy of it!  And to me, he was all that!  He and his working buddies went out for lunch that day.  As they were leaving the parking lot, I could see him trying to figure out what was in front of him.  It took him a minute to realize that that was me holding the sign.  I think he was in utter shock! February 24, 2000:  It was evening.  We were overlooking the glittering lights of Las Vegas as we stood up on the Temple grounds.  We spoke of the city’s glittering beauty.  We spoke of the beauty and majesty of the Temple and its sacred purpose. And then came a question.  Yes, the question.  The kind that results in being engaged.  And we were engaged! Could it be so?  It was! And … a lucky girl I was because he was willing to marry me on my “April 14th”.  Yay for a little girl’s wishes!  Smiles. Looking back, I’m sure the folks would have liked a little more time… but of course, they were in full support. (ha)

984050_10203718740028814_15457019397428509_nApril 14, 2000:  My mother and Aunt had stayed up all night to finish sewing my bridesmaid dresses and pressing my wedding gown.  My mother was/is amazing! … It was a beautiful spring day! The flowers were in full bloom.  The white clouds were in the beautiful blue skies (kind of all over – not so fluffy, but no matter).  It was the day of my dreams.  Of course, there were hiccups.  The photographer arrived over an hour late, my bouquet and flowers never showed up (until the reception much later) and 10006435_10203718739308796_3840165559692796949_nthe beautiful glass blown cake top never came home with us.  But the day was perfect anyhow!

Our days since have come with many bumps in the road.  Through those bumps, I have been reminded time and again the answer to my prayers that I had received when considering this marriage.  And then more prayers were answered along the way.  We held on, we worked harder, 1507140_10203718414900686_3785667598740269804_nand we loved more.  15 years later, and I am so grateful for the experiences we have gone through.  I love him more than I ever imagined I could or would.  He is a handsome, strong, patient, loving, forgiving, happy, talented, and all-around, in-and-out amazing man, son, father and husband!  Sealed to him for eternity is a blessing.  A blessing I am so grateful we held on to (and continue to hold on to and work for)!  Happy Anniversary, my love! Here’s to the rest of time and all of eternity! *MWAH!*

Smell the Roses!

Take the time to stop and smell the roses! … Today I had the opportunity to go film with a good friend, Bonnie.  She is a woman of many talents!  One of her talents is up-keeping the beauty in and around her home.  She showed me around her beautiful home and I was brought back to the age old saying, “Stop and smell the roses!”  Sometimes, life is so busy and we – I – forget to enjoy the little things.  I was grateful that Bonnie helped me out and made sure that after filming to stop and smell the roses.  That time really made my day a lot more brighter!IMG_7260 IMG_7261

Shake-It-Up!

Oh, the shelves of supplements, shakes, powders, labels! Oh, the choices, the many, many choices!  … For me, it can feel like a jigsaw puzzle: WHAT, HUH, WHERE, HOW, and “Oh, forget it!”

Is your head spinning?  Oh yeah, mine too!

Being educated about what you are eating is vital!  And I read labels religiously!  I am still working on eating right myself!  Many years in the making and still learning!  But I have found that I love to eat healthy.  It gives me energy, my nails grow, my hair is shiny, I don’t have that sick feeling after I eat.  One thing that I add to my everyday regimen is a HEALTHY shake that A- tastes good, B- gives me all the vitamins and energy I need and C- doesn’t include the gunk and caffeine that I don’t want in the first place! (Did you know? Most “healthy” powder supplements include caffeine of some sort.  For me, this is always a turn-off.)  So, my honey and I went on a quest to find a supplement powder that is not a supplement of fillers, filled with GMOs, caffeine, soy, gluten, but instead full of natural, raw, organic plant goodness that is affordable.

The only powders we have found that meet our requirements and we can drink without gagging (and that’s important, especially with little people in our home), is Garden of Life Raw Protein and Garden of Life Perfect Food Raw.

I try and eat my 3 cups/day of fruit and vegetables in the raw and natural form, which is the best form.  However, I’m just not that good sometimes or I just don’t have the time or I just want something yummy (without the *blah* of sugar/calories/after-sick, but with the satisfaction that it was good for me).  I know my weakness… my lack of time or lack of access or *whatever* will most likely keep me from consuming the good stuff (nutrients that my body needs).  (…Sometimes I have to eat and run – eating a salad while driving is not ideal, nor is it safe ha.) Garden of Life Perfect Food Raw and Garden of Life Raw Protein make it possible to enjoy the nutrients, and be fed all the good stuff!  That’s why it is a staple in our home!

If Ryan makes it, his recipe looks like this:

1 cup of Almond Milk (Chocolate or Almond/Coconut)

1 Scoop of Garden of Life Perfect Food Raw (Chocolate Cacao)

1 Scoop of Garden of Life Raw Protein (Chocolate Cacao)

Bunch of baby kale

Bunch of spinach

Banana

And whatever other added fruit or vegetable he sees on hand. Ha.

*Blend it up real good.  Drink and wipe your mouth because you might have an organic mustache! Ha.

1/2 cup Aloe Vera Juice – Inner Filet (I use Lily of the Desert Aloe Vera Juice)

1/2 cup water

1 Scoop of Garden of Life Perfect Food Raw (Regular)

1 Scoop of Garden of Life Raw Protein (Vanilla)

2 cap-fulls of Bragg Organic Vinegar Apple Cider

Bunch of baby kale

Bunch of spinach

Fresh or Frozen berries (or whatever frozen fruit I have- mango/peach/strawberry blend is another favorite of mine.)

*Blend it up real good and drink up pure goodness.

If my kids make it, their recipe looks like this:

1/2 cup Almond Milk (Almond/Coconut)

1/2 cup water (Or 1 cup of almond milk, no water)

1/2 Scoop of Garden of Life Perfect Food Raw (Regular)

Small bunch of Spinach

Bunch of strawberries (frozen or fresh)

Banana (1-2)

*Blend it up real good and prepare for “Mmmm”.

My kids will also go the chocolate route. Or they’ll add frozen blueberries or other fruit. That’s what is awesome about this glass full of goodness – SHAKE IT UP and create them as the tastebuds desire!

 

Garden of Life Raw Protein and Garden of Life Perfect Food Raw are a staple in our home.  If my kids like it for the taste, and I like it for the nutrition, and my hubby likes it for both, then that’s that!  😀

Sometimes, learning to eat nutritious can feel like figuring out a jigsaw puzzle!  “How, where, what will work and what won’t?”  Don’t give up on this jigsaw puzzle!  It’s worth the learning curve.  -Susan

Depression – Book 1

My depression crept in and I kept smiling and then BOOM BANG it hit HARD.  My schedule was crazy, my stress at work built up, the weather changed from summer to winter and I just couldn’t handle anything anymore!

It was then that I realized I needed to find myself a counselor/therapist.  It was the best decision I could have made to really start healing and be able to start living again.  I have been very open about the beauty of therapy, especially to interpreters, stay-at-home moms, my friends, and Facebook audience.  *heart*

Near the end of my very first session with my therapist, she suggested I read the book, “Codependent No More: How to Stop Controlling Others and Start Caring for Yourself” by Melody Beattie.  I didn’t know what that meant by the title alone and I wasn’t sure how it would apply to me.  But a friend had the book and said it was her favorite book in her own discovery and healing.  This book comes from the perspective of those who deal with people addicted to alcohol and drugs.  I have never been exposed to that at all.  I came from a home where love, respect, rules and consequences filled the walls.  So I wasn’t sure how it would apply to me or if I would relate. But I did relate, very much, to the information shared in this book – and that really aided in my healing process.  I read it from start to finish, took notes, cried, journaled, and re-read it.  I’m not much of a reader but this was a book of healing and I loved it!  It’s definitely a permanent book in my library!

Just do it!

Exercise doesn’t require a fancy gym, expensive shoes, clothing with a sport logo on it or anything else.  It just requires doing it.  That’s the only way to get the job done!

 

The previous owners used this oversized garage to store their horses during the winter.  We’ve converted it into an exercise room (my area), office (my husbands area) and a place to hold our food storage (the families area? ha).  Oh sure, we’ve cleaned the floors, put up a wall and added a heater, but other than that, it’s just a room!  🙂

Depression – Post #1

Depression, according to the World Health Organization, affects more than 350 million people globally, of all ages.  That is a lot of people!  I was not apart of this statistic until a couple of years ago.  My family moved to a climate that was much different than any other area we lived in previously.   My workload increased.  I didn’t have (so I thought) as much time to focus on my health and well-being.  Through all of this, I slowly (then it spiraled out of control) experienced this serious disease called depression.  IMG_4443

The picture above is me at Disneyland.  Isn’t life supposed to be the happiest place, all the time?  Sometimes we go through what feels like a roller-coaster. The free-fall in a thunderstorm is what Depression feels like for me – well, that and the loopdey-loops and the river ride and then the wet ones, and then the tiki-room, and then the haunted mansion and the … yeah!  But life has gotten better, as I’ve learned and I’ve grown.

Through my writings, I want to share with you what I went through, how I felt (and still feel, at times) when depression sneaks its nasty cloud into my being, how I am learning to “control” depression and what helps me feel balanced and stronger through these tactics.  Like the disclaimer says above, I am not a doctor or therapist or personal fitness trainer.   I am sharing with you what works for me, what my therapist and general doctor and even my chiropractor have “prescribed” for me.  This may not be your “prescription”.  However, I know that from these experiences, I find I am happier and keep depression at bay.  I still experience depression. But I know what works for me.  When I get off my plan, I am reminded I am not cured.   And then, I have to start again, sometimes from the beginning, with baby steps to get back on my plan.  One of the greatest things I have done through it all is get professional help.
